Q: How much pressure should we be applying during tapping?
A: Speed and strength of Tapping can be varied according to preference. You can Tap, rub, press, or even simply gently place fingers on the points. If there's a "Hurts Good" point and pressure, go along with it. You might need to experiment to find your sweet spot, but trust that you are doing what’s best and right as you listen to your body.
Q: How long should you tap each point?
A: Some people suggest 7-10 as a starting point, but you can really Tap as much as you want. If there's a zing to that spot, and/or as long as it feels good to Tap, you can stay there too.
For example, when in a hurry, I might do 3 Taps each to quickly move through the points. OR, if I have time to sit and be quiet, and especially if I notice myself drawn to and/or getting activated at a particular point (often shows up as getting emotional or the Tapping spot is very tender) I might stay there for a while. Or if I am feeling really tired, I might just place my hand on that area (which we tend to do already.) Each body and person is unique, you are free to do what feels best for you. If we think of a stressed child that's acting out in frustration or upset, some might calm down quicker than others, what works for one may not be the best solution for others. Just try to take a moment to tune in and listen to your own body and the nerve signals, and find what works.
Q: What are good resources to further look up Tapping?
A: Dr. Peta Stapleton (named Australia's Psychologist of the Year 2019) is producing a number of groundbreaking studies.
The Tap-along video produced and shared by the Peaceful Heart Network is non-verbal, gentle and effective. (Also available for free download here.)
Brad Yates' channel could be worth looking into as he has a huge library and many videos to choose from, that are relatively short and concise. Whether his perspectives/ideas and words offered work with you or not is only what you can decide, but his videos can be a good starting point.

There are many other practitioners as well as many EFT Tap-along videos in the cyber-sphere. Though not all videos are equal in effectiveness, I personal believe that some Tapping is better than no Tapping. I hope you can find some that resonates with you and keeps you Tapping.

Q: Where can we find more information about the meridian points for reference of where to Tap?

A: I understand this very well. As a highly sensitive person myself, with history of depression/anxiety/panic attack, this is one of the tools that has been extremely helpful in helping me regain control over my life in the past, and in a major way post 2020. Growing up in Japan, I was blessed to have had the exposure and experience of acupuncture and other traditional self-care tools. Tap-along Videos are great for to get started with. Just as daily flossing helps prevent the built up of plaque, Tapping can help prevent the built up of stress (as well as help chip off the stress!)
Note of Caution: If the anxious feelings are stemming our early childhood conditioning and/or earlier experiences (emotional wounds, traumas etc), then it is generally safer to work with a qualified practitioner to ensure you have good support in dealing with the tough emotions that may surface.
